We grow our organic chamomile in Shropshire on south-facing land which allows our flowers to take full advantage of the summer sunlight to ripen.  We harvest just the flowers as this is where the essential oil is concentrated.  It's this oil that gives our tea its unique apple-like taste.  The crop is picked by hand in late summer and carefully dried with warm air to retain the bioactive compounds which are released in the cup when brewed with hot water.  We grow without the use of artificial fertilisers or chemicals for maximum purity.
